Directions
Preheat oven to 375 degrees F. Place Madeleine tray on Perforated Baking Sheet and set aside. Melt butter in microwave and set in refrigerator until needed. Beat eggs and sugar together with whisk just until blended. Add in vanilla, lemon and salt. Add in flour, beating just until blended. Add in cooled melted butter in a slow, steady stream, beating as you pour. Beat until blended. Do not overblend. Spoon about one tablespoon of batter into each well. Bake until puffed in the middle and golden around the edges, about 13-15 minutes. Let cool before serving. Dust cookies with powdered sugar if desired. Madeleine's only stay good for a few days so freeze leftovers if needed
